Scottish Bed & Breakfast

White Chicken Chili

1 small onion
1 tbs cumin
2 tsp butter
3 cups chicken broth
2 cups cooked chicken
48 oz great northern beans
1-4 oz green chilies
4 oz Monterey Jack Cheese

1. Sauté onion in butter and cumin in a Dutch oven
2. Add chicken broth, chicken, beans and chilies
3. Cook 10 minutes till hot and bubbly
4. Serve with Monterey jack cheese and cilantro

 

Apple Salad

Salad:
1 head lettuce
1 pkg spinach
1 lb cheese cubed
3 apples cubed (red and green)
1 cup cashews

Dressing:
1 tbs grated onion
¾ cup sugar
1tsp dry mustard
½ tsp salt
1/3 cup vinegar
1 cup oil

1. Mix salad ingredients together in a bowl
2. For dressing, in a blender put all the dressing ingredients except for the oil, and mix together for 1 minute. Add oil and mix for another 30 seconds
3. Pour dressing on top of salad

Chicken Stew for DOGS

1 whole chicken
1 clove of garlic
2 potatoes diced
4 carrots diced
3 ½ quart water
2 turnips diced
1 ½ rice, not minute, cooked
1 can unsalted green beans

1. Cook chicken, garlic, potatoes, carrots, and turnips in 3 ½ quarts of water
2. Bring to a boil and cook over medium heat 1 ½ hours
3. Cover and cook over low heat for 1 more hour
4. Transfer chicken to a platter and cool
5. When chicken is cool, remove the bones
6. Put the chicken back in pot and add green beans and rice
